Mr. Toshihiro Hirayanagi, the farmer at the Yamahira tea garden, pursues a philosophy that emphasises an innovative and comprehensive approach to tea cultivation, and describes tea as being "calming for the soul". In accordance with this philosophy, Mr. Hirayanagi has avoided the use of pesticides and chemical fertilisers since 2003, and is a chairman of the Fuji City Temomi Preservation Society. He is a recognised and renowned master of the traditional art of temomi tea rolling.

GABA

GABA teas were developed in Japan as a functional tea: due to the production method, the leaves synthesise a high concentration of GABA. GABA is the most important messenger substance (inhibitory neurotransmitter) in the central nervous system and is involved in significant processes within the body. GABA tea also contains the richness of nutrients associated with green teas generally including catechins. Beyond their health benefits, GABA teas are beloved by tea connoisseurs for their smooth and buttery taste.

GABA Content

The tea farmer ensures that a high GABA content is achieved through careful selection of the best leaves and his unique processing method.

GABA Amino Acid

GABA (γ-aminobutyric acid), is a natural amino acid and an important non-proteinogenic, endogenous amino acid.

GABA is found in various amounts in certain foods and is also formed in the brain from glutamine. It is found in particularly high amounts in special green tea GABA tea (up to 400mg/100g), tomatoes (up to about 60mg), sprouted rice, certain fermented foods, potatoes (16-60mg), citrus fruits (10-23mg).

Cultivation & Processing

The tea farm is located in a valley by the Ashitaka Mountain, to the southwest of the famous Mount Fuji. This protected area provides the ideal climate for the tea plants to grow, with plenty of fog and an optimal provision of water to the soil from the Sudo river, which passes through the valley. The farm has been able to avoid using chemical fertilisers and pesticides since 2003 thanks to these optimal growing conditions and their innovative innovative cultivation practices. Instead, the farm utilises high-grade organic fertilisers such as kelp and buckwheat husks to optimise the quality of the soil and encourage the growth of healthy, nutrient-rich plants.

Origin

This tea is sourced exclusively from the tea plantation in the Sudo River Valley and is purchased directly from the farmer.

Brewing Guide

2 heaped tsp per 200-300ml (70°C) water.

For a mild, relaxing tea: steep for 30 seconds
For a strong, stimulating tea: steep for 3 minutes

Recommended Teapot

To serve, a Banko kyusu made from 100% violet original Banko clay is ideal. When fired, this famous clay brings out the gyokuro's flavour, amino acids, chlorophyll and other special ingredients, in the very best way. Vintage kyusus from before 1990 could still be made from 100% original clay from the Banko region. Otherwise, a high-quality shiboridashi, a handleless teapot popular among gyokuro lovers, is suitable for intensive umami infusions.

Recommended Storage

For keeping this tea fresh, a tea caddy made from cherry tree bark (solid wood, kabazaiku chazutsu), an airtight, laquered tea caddy or an elegant, handcrafted metal Kaikado tea caddy are ideal storage solutions.
