Selenium is an essential trace element and an integral part of more than 25 enzymes. The mustard plant is a member of the cruciferous family. In addition to organic and inorganic selenides, mustard seeds are rich in the selenium-containing amino acid selenomethionine. With an absorption rate of 80-100%, organic selenium is highly bioavailable and occurs in combination with other compounds found in the seeds.
