Sesame Butter (Tahini)
Sesame Butter (Tahini)
This sesame butter comes from renowned organic raw food pioneers, Perl'Amande of Provence. The intense sesame aroma with strong, vegetal, almost metallic notes and its creamy, barely oily consistency are the result of long-standing artisan tradition. For over 40 years, all nut butters have been slowly ground in small batches on stone mills under water cooling. This old and now rare production method gives the sesame butter a complex sesame flavour without roasted aromas.
Cultivation & Processing
Cultivation & Processing
Perl'Amande
In 1920, when Gustave Dejean returned from the First World War to the small, picturesque town of Oraison in Provence, he opened a bakery. Only a few years later he invented the first almond-peeling machine in the world, which became the basis for "Sofalip", a flourishing business in Provençal almonds that soon supplied confectioners and nougat producers across France. "Perl'Amande" in its current form was founded in 1964 and has since specialised in the production of quality almonds, nuts and dried fruits. The most popular of all their delicious creations, however, remains their legendary almond butter, for which Perl'Amande has earned a stellar reputation among connoisseurs.
The foundation for the unparalleled taste of Perl'Amande's products is built upon their cold stone-milling production process that brings out a robust taste without the use of additives. The avoidance of additives can be attributed to the cornerstone of Perl'Amande's corporate philosophy, namely their dedication to organic cultivation as one of the first organic-only food producers since the 1970s. Today, Perl'Amande offers a broad range of nut butters, vegan milks, chocolate bars and marzipan, and can be found in all trusted organic supermarkets in France.
In 2012 Perl'Amande was distinguished with the title of "Entreprise du Patrimoine Vivant" (Living Heritage Company) from the French Ministry of Commerce - an award only given to firms with special expertise. Together with the World Food Programme, Perl'Amande passes on this expertise to partners in lesser economically developed countries with food scarcity.
Gentle Processing
Perl'Amande is renowned for the characteristic smoothness of their nut butters, which contain minimal oil. The uniquely creamy texture of their products is the result of a specialised and traditional stone milling process that finely crushes the almonds, nuts and seeds while keeping the naturally occurring oil in the resulting butter. Moreover, as a product of cold processing without roasting, the beneficial nutrients of the raw ingredients are preserved. Cooled milling further draws out the flavour of the organic raw ingredients, which are sourced from all over the world for their natural, authentic flavour.
