How are we different?

We source our limited edition organic sea lettuce from a family farm in the vast Donegal Bay in the remote north-west of Ireland. Seaweed harvesting has been a tradition here for generations. For 20 years, the Irish farmer has specialised in dried gourmet seaweed in raw food quality. These are harvested and sorted exclusively by hand. This ensures a high-quality selection and a sustainable, environmentally friendly harvest. Drying is carried out gently at particularly low temperatures in order to preserve the high quality of the naturally grown seaweed. Seaweed is naturally rich in iodine. Experience has shown that the iodine content can be subject to strong fluctuations.

We use a particularly high-quality, airtight flavour protection bag with a zipper. The flakes are optimally protected from moisture, oxidation and the effects of harmful substances thanks to a 7-layer coating with high barrier security.

Sea lettuce

Sea lettuce (Ulva lactuca) can be found in coastal areas almost all over the world. With its round shape, light green, fine leaves and a diameter of 20-30cm, it is reminiscent of a head of lettuce. It thrives in plenty of sunlight from the intertidal zone to the shallow sublittoral as well as free swimming in places. However, it is mainly found attached to rocks, mussel shells or larger foreign algae. Due to its high nutritional quality, fresh colour and tasty aroma, sea lettuce has been highly valued for many generations when dried and finely ground as a seasoning and as a tasty sea vegetable in a variety of dishes.

Cultivation & Processing

Our high-quality sea lettuce comes from a small family farm from a certified organic, natural seawater culture in Donegal Bay in the remote north-west of Ireland. For more than 20 years now, the Irish farmer has specialised in dried gourmet seaweed in raw food quality. The harvesting area is partly located in a specially protected area, the Special Area of Conversation (SAC). With respect for nature and the environment, the seaweed is harvested here by hand under the strictest conditions. The water quality of Donegal Bay is also regularly tested by the government. Several beaches in the extensive bay have been awarded a blue flag, which indicates the best water quality. Due to the strong tides and rough seas, the harvesting season is limited and only healthy and strong plants can survive here. The harvest only takes place at low tide for a few weeks each year. The season for sea lettuce is very short. The naturally grown seaweed is only available for two to three months. They are carefully harvested and sorted by hand and then gently dried in drying rooms at temperatures below 40°C using a dehumidifier. Careful harvesting and drying ensure that the unique flavour and premium raw food quality are preserved.
