Purple corn is a variety of the species Zea mays L. and is endemic to the Peruvian Andes, where the corn color originally developed as an adaptive trait of the plant. Its cultivation has a tradition dating back thousands of years and is still carried out today in small family farms at cultivation altitudes of up to 3000 m above sea level. For the production of Purple Corn Powder, the kernels of the hand-harvested corn cobs are removed, cleaned and gently dried at <45°C and finally ground into fine powder. In the last step, the finely sieved powder is directly packed dry, light and airtight.
