Dragon Fruit

The dragon fruit, also known as pitaya or pitahaya, is a striking and exotic fruit that belongs to the cactus family (Cactaceae). Originally from Central and South America, it is now mainly cultivated in South East Asia, Mexico and Israel. The dragon fruit is characterised by its bright pink or yellow skin and the white or red flesh, which is interspersed with small black seeds. The taste of dragon fruit is mildly sweet with a flavour resembling a mixture of kiwi and melon.

Kiwi

The kiwi (Actinidia deliciosa) is a popular fruit that originated in southern China and is now cultivated worldwide, particularly in New Zealand, Italy and Chile. It is characterised by its brown, furry skin and bright green flesh with small black seeds. Its flavour is sweet and sour, often described as a mixture of strawberry, melon and banana.

Physalis

Physalis, also known as Cape gooseberry or goldenberry, belongs to the nightshade family (Solanaceae) and is known for its small, orange fruits, which are encased in a papery calyx. Physalis originally comes from South America, particularly from the Andean regions of Peru, Colombia and Ecuador. Today, it is cultivated in temperate and tropical climate zones worldwide. These fruits are characterised by their sweet and sour flavour and crunchy texture.

Our freeze-dried fruits are produced using a particularly gentle process in order to preserve sensitive ingredients such as flavours and bioactives. In the first step, the fruits are frozen at very low temperatures, freezing their water content. Next, the pressure is reduced and the temperature is slowly increased so that the ice transitions directly from a solid to a gas. This removes the majority of the water from the fruits while retaining their natural structure. In the final step, the remaining water is extracted, giving the fruits their porous, light structure and extremely long shelf life.

This gentle freeze-drying method ensures the retention of the fruit's natural flavour and its full spectrum of nutrients. Our freeze-dried fruits can be enjoyed all year round.
