Only freshly harvested, organic fruit are used for our premium freeze-dried sour cherries. After harvesting, they are gently freeze-dried, thus preserving their valuable range of nutrients and guaranteeing their intense flavour. Our cherries are 100% natural and require no preservatives. They make a great snack or addition to muesli, porridge or yoghurt.
The sour cherry (Prunus cerasus) is a popular fruit known for its tart flavour. It belongs to the rose family (Rosaceae) and is often grown in temperate climates. In contrast to the sweet cherry, the sour cherry is smaller and is more acidic, which makes it ideal for use in jams, juices and baked goods.
Our freeze-dried fruits are produced using a particularly gentle process in order to preserve sensitive ingredients such as flavours and bioactives. In the first step, the fruits are frozen at very low temperatures, freezing their water content. Next, the pressure is reduced and the temperature is slowly increased so that the ice transitions directly from a solid to a gas. This removes the majority of the water from the fruits while retaining their natural structure. In the final step, the remaining water is extracted, giving the fruits their porous, light structure and extremely long shelf life.
This gentle freeze-drying method ensures the retention of the fruit's natural flavour and its full spectrum of nutrients. Our freeze-dried fruits can be enjoyed all year round.
