Our freeze-dried fruits are produced using a particularly gentle process in order to preserve sensitive ingredients such as flavours and bioactives. In the first step, the fruits are frozen at very low temperatures, freezing their water content. Next, the pressure is reduced and the temperature is slowly increased so that the ice transitions directly from a solid to a gas. This removes the majority of the water from the fruits while retaining their natural structure. In the final step, the remaining water is extracted, giving the fruits their porous, light structure and extremely long shelf life.
