Bilberries
Wildcrafted bilberries, also known as European blueberries (Vaccinium myrtillus), grow in the wild and are significantly smaller than their cultivated counterparts (i.e., blueberries). They have a darker, almost black skin and deep purple flesh; their flavour is more intense, fruity and often slightly tart; and they are richer in nutrients and contain more antioxidants, such as anthocyanins. However, their cultivation is seasonal, making them harder to find.

Our freeze-dried berries are produced using a particularly gentle process in order to preserve sensitive ingredients such as flavours and bioactives. In the first step, the berries are frozen at very low temperatures, freezing their water content. Next, the pressure is reduced and the temperature is slowly increased so that the ice transitions directly from a solid to a gas. This removes the majority of the water from the berries while retaining their natural structure. In the final step, the remaining water is extracted, giving the berries their porous, light structure and extremely long shelf life.
This gentle freeze-drying method ensures the retention of the fruit's natural flavour and its full spectrum of nutrients. Our freeze-dried berries can be enjoyed all year round.
