Chinese Yam
Dioscorea batata is a type of yam that originally comes from China. It forms 5-8m long tendrils and often roots over 1m long, which thicken towards the bottom. The root is surrounded by a brown epidermis with fine root hairs and is snow-white on the inside.
Yams
Although sweet potatoes are often referred to as yams, true yams and sweet potatoes belong to completely different families of tuber crops. There are hundreds of variants of yams native to Asia, Africa, as well as North, South and Middle America, and they are popular in cuisines all over the world. Yams may be cooked similarly to sweet potatoes, but their rougher skins and starchy flavour are distinctive.
