How are we different?

Our carob powder is exclusively sourced from local old growth carob trees in Sicily. Over 70% of traditional carob production in the world takes place in Sicily, as the cultivation of carob has been intertwined with Sicilian culture for centuries. The result can be tasted: Sicilian carob is particularly flavourful and rich.

Our carob powder is made from carob pods sourced from native, certified organic cultivation, without the use of pesticides. Carob trees characterise the landscape of southeastern Sicily, where the mild Mediterranean climate is warm year-round and facilitates the growth of nutritious and flavourful carob. Only fully ripened and whole pods that have already fallen to the ground are selected for production. The natural sweetness of these carob pods is delightful, and we do not add sugar or flavour enhancers to the powder. Our natural carob powder tastes exquisite all on its own.

The cultivation region stretches across a swath of land in the southeast of the island that benefits from the climate. The carob trees here are managed by small, traditional, family-operated businesses. The ripe carob pods are collected by hand from August to September in cooperation with local farms that ensure fair working conditions. We support these farmers out of conviction, because the working conditions for harvest workers at large plantations do not meet our high standards. The harvest itself also follows tradition: since the rocky terrain does not permit harvest machinery, the ripe carob pods that have fallen to the ground are collected by hand every day during the harvest period. Pods still attached to the tree are pulled down with a rake, in a manner similar to olive harvesting, without damaging any flowering parts of the tree. Thereafter, the pods are carefully sorted, cleaned, and broken apart to remove the seeds. Only the fruit pulp of the pods is dried, gently roasted, and finally milled into aromatic carob powder. The seeds, from which a natural thickening agent can be produced, are not included in the powder.

Our carob powder has an intense flavour with a natural sweetness reminiscent of caramel and chocolate withouth the use of any sweeteners, sugars, or flavour enhancers.

Carob

The carob tree (Ceratonia siliqua) can live for hundreds of years and reach heights of up to 12m. The trees flourish on rocky, austere soil by growing strong, far-reaching networks of roots that can absorb water and nutrients from deep within the earth.

Traditionally, the fruit pulp of carob pods is dried and milled to powder. The typical taste is aromatic, sweet, and reminiscent of caramel and chocolate, which is why the powder is often used as a chocolate substitute. The seeds, from which a natural thickening agent can be produced, are not contained in the powder.

Region and Processing

Over 70% of natural and traditional carob production takes place in southeastern Sicily. The carob tree is closely intertwined into Sicilian culture, which is why the best carob products originate from Sicilian cultivation and production.

The fruits of the carob tree are technically legumes and are referred to as pods. They are traditionally harvested from August to September. We source our carob from southeastern Sicily in the picturesque region located between Ragusa and Syracuse, where a number of small, family-operated businesses are dedicated to carob cultivation. Because harvest machinery cannot be used on the rocky terrain, the ripe carob pods that have fallen to the ground are collected by hand. Ripe pods still hanging from the tree are carefully raked down, much like during the olive harvest, without damaging any of the tree's blossoms. After harvest, the pods are sorted, cleaned, and deseeded. Only the fruit pulp of the pod is dried, roasted, and milled into a fine and aromatic carob powder.

The carob seeds are valuable in their own right and can be milled into a flour that can be used as a natural thickening agent. None of the seeds, however, are contained in our carob powder.
