From the Finca La Torre olive farm (230ha, 33,000 trees, of which 40% are at least 100 years old, 120.000 litres p.a.)

Flavour: Rich, intensely fruity, vegetal bouquet incuding beans and celery, as well as hints of mint, basil and sage; a powerful yet delicate bitterness is balanced by piquant kick
Pairs beautifully with lentil dishes, tuna carpaccio, marinated octopus, salmon pasta, grilled blue fish, grilled pork, medium-ripe cheese
Harvested by hand and mechanically between early October and mid-November 2021
