Ashwagandha (Withania somnifera), also known as sleeping berry, contains withanolides - the most researched phytochemicals in ashwagandha to date - in its roots and leaves. They belong to the group of steroidal lactones and are similar in their chemical structure to steroid hormones. Quercetin is one of its bioflavonoids, the most frequently occurring polyphenols in the plant world. As plant pigments, flavonoids are responsible for the colouring of flowers and leaves as well as for protecting plants from certain environmental influences. The deep red color characteristic of the beetroot tuber is due to the high concentration of the plant pigment betanin. The tuber is also known to absorb large quantities of nitrate compounds. The phytochemical composition of saffron has now been well researched and over 150 substances have been discovered in saffron to date; the most popular ingredients are safranal and crocins. Crocins are water-soluble carotenoids and are responsible for the yellow color of saffron.
