Red yeast rice is a product the fermentation of ordinary white rice, which results in the presence of a mould (Monascus purpureus), which gives the rice a reddish-purple colour. Red yeast rice offers a high content of naturally occurring monacolin K, which is chemically identical to lovastatin, a drug used to treat high cholesterol. Monacolins inhibit HMG-CoA reductase, a key enzyme in cholesterol biosynthesis.
