The very old olive variety Athinoelia for this olive oil is grown exclusively in the Greek region of Laconia, near the Parnon Mountains (Single Estate). The dry, very hot mountain climate in summer and cold, snowy mountain climate in winter decisively shapes the aroma of the olives. Between the fresh mountain air and the pleasant sea breeze of the Laconian Gulf (Mediterranean Sea), the olive trees are traditionally cultivated completely without the use of pesticides.
The harvest of the olives takes place at a very early stage. Due to this very early first harvest, the olive oil contains extraordinarily high levels of polyphenols, such as oleocanthal, oleacein, tyrosol and hydroxytyrosol. The olives are pressed exclusively in the gentle cold pressing process, so that we can offer here a high polyphenol olive oil of the highest quality class "Extra Virgin".
The intense, clear-green oil is characterized in particular by a fruity aroma with green, vegetal, reminiscent of artichokes nuances and a noble bitter taste with sharp notes.
