In botanical terms, a SCOBY is a lichen made of a whitish-beige substance consisting of yeasts and bacteria, held together by cellulose. This substance is commonly mistaken for a fungus. The live yeasts and bacteria found in a SCOBY exist in a symbiotic ecosystem and are mutually beneficial to each other. For example, the yeast produces alcohol, which in turn feeds bacteria, which then produce valuable organic acids from alcohol and oxygen.
